Crispy Seared Salmon Salad


Ingredients

150g organic salmon

Salt & pepper,

1 tablespoon extra-virgin coconut oil
1 cup spinach
1 cup rocket leaves
1/2 cherry tomatoes
1/4 cup toasted almonds


Dressing


3 tablespoon olive oil
3 tablespoon lemon juice
1/2 teaspoon crushed mustard
Salt & pepper, 

¼ teaspoon chilli flakes
1 pod crushed garlic

 

Instructions

 

Season the fish and grill in oven or sear fry on pan by drizzling extra virgin coconut oil. Wash and mix all other ingredients and toss the dressing last just before serving
