Roasted Sweet Potato, Quinoa Salad


Ingredients

 

1 cup Sweet potato
¼ teaspoon garlic powder
¼ teaspoon Himalayans salt
¼ teaspoon of pepper
¼ teaspoon cumin powder
¼ teaspoon of oregano
¼ teaspoon of rosemary
1 tablespoon extra-virgin coconut oil
11/2 cup Kale leaves
1 cup rocket leaves
2 tablespoon dry cranberries
2-3 tablespoon sunflower seeds
1/4 cup onions
1/4 cup boiled quinoa
 2-3 tablespoon olive oil

 

Dressing
1tablespoon red wine vinegar
1tablespoon apple cider vinegar
Salt & pepper
 Pinch crushed garlic

1-2 tablespoon olive oil or extra virgin coconut oil

 

Instructions
 

Drizzle extra virgin coconut oil and roast sweet potato. Mix all the ingredients and drizzle dressing on top.
