Ingredients
Marinate Kale
- 2 Cups sliced Kale leaves
- 1 Tablespoon extra-virgin Olive oil
- Salt & Pepper
Garlic butter rice
- 2 Tablespoon organic grass-fed ghee
- 3 Tablespoon crushed garlic
- 3 Cups cooked rice
- ¼ Cup scraped coconut
- 2 Tablespoon chopped almonds
Instructions
Place kale in a large bowl. Drizzle over oil, sprinkle with a small pinch of salt and pepper. Scrunch with hands for 30 seconds, set aside while rice cooks (cook rice separately). Melt ghee in a pan and add in crushed garlic, scrapped coconut. Toss well until garlic is cooked, and coconut slightly turns colour. Stir in the cooked rice. Turn heat down to medium or low and finally toss all the marinated kale leaves.
- Rest for 10 to 15 minutes. Fluff rice with fork, stirring kale through.
- Lastly, stir through extra ghee and add salt and pepper to taste.
- Serve and sprinkle over nuts (or stir nuts through rice).
